I’m always looking for new and interesting ways to prepare chicken thighs. Some of my family’s favorite recipes include chicken adobo, Moroccan chicken, chicken shawarma and chicken that’s been coated in this simple and flavorful marinade. I happen to love chicken thighs – they’re inexpensive, flavorful and are much more tender and juicy than chicken breasts. This chicken thigh marinade brings out the best in this cut of meat, and best of all it takes just minutes to put together....

Some of my favorite things to cook are the ones that require time, different ingredients, multiple steps and generally just give me a little challenge. Challenging foods get me excited and make me feel like I accomplished something awesome. I know it’s weird, but I love it. It has been ages since I posted a Indo-Chinese recipe and for someone who loves fried rices and noodles, I make it at least once a month. I know, it’s Healthy January, and over here we’re eating nachos…but balance is everything. And in my honest opinion, these nachos aren’t “un-healthy”. They might not be a salad or green juice, but they’re protein and veggie packed. And they’re made with simple swaps that make them perfectly acceptable for January! When I’m looking for a speedy dinner, I often turn to chicken breast tenders. They’re lean, cook quickly and my kids love ’em. This garlic chicken uses breast tenders in the most delicious creamy sauce with plenty of garlic involved! Add some mashed potatoes and a steamed veggie and dinner is served....

We had a very cold, very snowy, Saturday this weekend. This soup made for the perfect dinner at home. Over here we’ve officially moved on from fall and have entered the winter season. Is it early? Yes, but that’s what you get when you live in the mountains. There are some who would be a little upset, but since our leaves have long been gone, I’m welcoming the snow with open arms....

Most years when it comes to Thanksgiving, I love a traditional menu filled with everyone’s favorites. I try to include all the classics, but this year things feel different. I’m having fun testing out some not-so-typical holiday recipes. As far as sides go, we all love my sweet potato casserole (no marshmallows for us though). Baked apple recipes, dishes made with pumpkin, cozy stews and chilis, fresh bread, and warming cocktails. As we enter into September this year, I have so much excitement....

No matter how busy things are with our lives, everything slows down for a few days. I’ve been cooking away and spending time with my family. We’ve had snowy weather, good food, and many laughs. With our homes full of family members (my parents have over 18 people at their house this year)....
