If you love spinach and artichoke dip, you’ll adore this simple yet satisfying chicken meal! Here I am, back with another one pot meal! My inspiration for this one is the classic and oh so delicious spinach artichoke dip. I mean, who doesn’t want to eat chips and dip for dinner once in a while? This one pot chicken with creamy spinach artichoke pasta tastes a lot like the dip, but it’s not as rich, making this a perfect dinner for a busy weeknight....

These are a little different, but I am so excited about them. In full disclosure, they are not the prettiest. But tucked inside these little handmade dumplings is the yummiest spicy/sweet butternut squash filling. I know chicken or mushroom fillings are more traditional, but butternut squash is in season, and it makes such a wonderful filling! The funny thing is, I’ve wanted to make this recipe since last fall. It may have taken an entire year to get these ready for you all, but I’m happy I finally pushed myself to make these....

Because I kind of do. I am seriously mad at myself that I waited so long to share these with you guys. Like a whole four days or so. Now, looking through these pictures they are all I want to smell baking in the oven. The smell alone is reason to make them. It is so warm, cozy, comforting and fall. When it comes to sharing recipes, there are definitely times when I’m not sure what to make. I can be very indecisive. If I don’t love the idea on paper I tend to not even give the recipe a try. When I’m feeling like I don’t have a concept that I LOVE, I like to head to the pantry. I look to see what’s there that needs to be used up....

Come the end of July, the sweet summer peaches are really rolling in. They’re filling the shelves of our local grocery stores, farmers markets, and if you’re lucky enough – there at your local farm. It’s so exciting! I said this last week when I shared my peach cobbler, but I’ve so many new ideas for peaches this summer. This is just the beginning! We can’t really get berries year-round, but stone fruits are a totally different story....
