I know we still have a little over a week left of summer, but seeing as fall is my very favorite time of year, I’m kind of just ready for it to start! OK, and it’s also felt like fall here since late August…remember it totally snowed on the mountains way before Labor Day! UGH. Not ready for the snow, but I am loving seeing the colors of the leaves start to change…my favorite!...

I prefer to make my own seasonings whenever possible as they’re easy to make and taste amazing. Some of my favorites include Jamaican jerk seasoning, steak seasoning, Cajun seasoning and this flavor packed salmon seasoning. I prepare salmon at least once a week as it’s healthy, readily available, and my whole family enjoys it. When I need a super quick meal, I sprinkle my homemade salmon seasoning over a fish fillet, pop it in then oven, and dinner is ready in a flash!...

It’s officially football season! Look, to be honest, I get way more excited that it’s apple season. But in September and October, I embrace football, or at least the idea of it. To me, it signals the start of fall. There’s something kind of fall-ish about Sunday nights with football on in the background. And getting to experience Creighton’s love for his hometown team, aka the Cleveland Browns, is the best....

How perfect is this recipe for the months of August and September? I first made it about two weeks ago and I’ve been excited to share it ever since. I’ve been traveling the past week, but I’m happy to be home today. I’ve got a counter full of cherry tomatoes and an herb garden overflowing with basil. I’m already looking forward to dinner! Now that it is officially summer, and finally warm in most places in the US (even here!), I feel like we need to talk about cool drinks. Not drinks with alcohol, nope, not today (but umm, you can for sure add some if you’re feeling it), today is all about super refreshing, healthy, ice-cold summer drinks. But with a little fizz, cause all drink benefit from some sparkles. Duh. Within the last month, I have been to California three different times....

And I could not think of a better recipe to end a long week than these shortcakes right here. I know that I say this often, but these are…at the very least…pretty close to perfection. Buttery flakey biscuits, finished with a sprinkle of coarse sugar and flaked almonds. Then loaded up with thyme infused honey peaches, whipped mascarpone cream and finished off with the top of the biscuit. You see?...

Growing up, bread was strongly associated with ‘fever’. Unless one of us were not well, bread hardly made it to our home. Pieces of milk dipped in warm milk would be soothing only for the first slice and after that, its pleading and pushing game between amma and us 😀 Sandwiches were never heard of in our house and even in the rarest of the occasions, dad got a packet of bread – we only had it with jam....

I make Mexican food at least once a week, including family favorites such as beef enchiladas, steak fajitas and this easy and satisfying taco lasagna. Tacos and lasagna are both crowd pleasing dishes, and you can merge these two classics to create a new favorite; taco lasagna! This recipe swaps out tortillas for noodles and uses enchilada sauce instead of marinara sauce. The end result is a hearty meal that will satisfy even the largest appetites....

I have never tried making Tandoori Roti at home until recently, I don’t know why. Most of the times when we are eating out, I would prefer either the Kulcha or the Tandoori Roti. Naan for me has always been very difficult to eat once it’s cold. Unlike Kulcha or Naan, Tandoori Roti is made from whole wheat flour and unless specified, it comes with no oil/butter which works perfectly for me....

Happy Monday! And it is a happy Monday because it’s a long holiday week with New Year’s Eve on Thursday, followed of course, by New Year’s Day! I said this yesterday, but don’t you guys love this time between Christmas and New Years’? I’m always sad to see the Christmas festivities end (actually so sad), but I love having family in town for the week and being able to take things a bit slower....

Getting back into the groove of real life after a week plus of being on vacation isn’t the easiest task, but I am chugging away. After a weekend full of all things work, I have one more very full day left in NYC today, then it’s back home to Colorado early tomorrow morning. As much as I’ve loved being away in tropical paradise and my time here in NYC, I have to say that I am excited to get back to my own bed, my favorite hiking partner, Merle, and yes, I am very excited to get back to cooking!...

It’s Tuesday and things are feeling sort of bright and fresh around here. I love, love, love that citrus fruits are a winter thing. I mean, I know that I use lemons and limes year round, but come mid winter they totally brighten up my day and obviously my foods too. I have a little confession though. This was the first time I actually ever baked with lemons, or any citrus fruit for that matter....

And just like that it’s Friday! This week flew bye and was packed with a lot of cooking, video making, photographing, so many phone calls, and a lot of writing. All good things, but I do have to say that I’m looking forward to some vacation time in the Caribbean with my family next week. Granted I have so much to do before I leave, but the blue water, heat, sunshine, and family time will all be worth it!...

Serious question for you guys, do you watch football, or do you participate in fantasy football? As you might guess, I don’t partake in either, BUT all of the men in my life do. Sure, I kind of enjoy having Sunday night football on in the background, as it reminds of being a kid and Sunday nights spent with my family. But if I’m being honest, I really don’t care much to actually watch the game....
