I’m all about the easy breakfasts, some of my favorites include egg muffins, chia pudding and this flavorful baked oatmeal. This is one of my go-to recipes for a wholesome and satisfying breakfast.
When I’m looking for a breakfast option to feed the masses, I often turn to baked oatmeal. It’s easy to make and serve, you can customize the flavors in so many different ways, and it’s totally delicious!
How do you make baked oatmeal?
This recipe starts with a combination of oats, baking powder, cinnamon, brown sugar, applesauce, milk, eggs, butter and vanilla extract which are mixed together in a large bowl. You want all the ingredients to be evenly distributed. Gently fold berries into the mixture. Be careful not to crush the berries. Pour the oatmeal mixture into a greased baking pan. Place a few berries on the top in whatever pattern you like. Next, bake the oatmeal until golden brown. Remove the oatmeal from the oven and cut it into squares for serving.
Tips for baked oatmeal
Be sure to use old fashioned oats not quick oats. Quick oats will get mushy in this dish. You can make a dairy free version of this recipe by substituting almond milk or coconut milk instead of regular milk and coconut oil instead of butter. This oatmeal can be stored in the refrigerator for up to 4 days. When you want to reheat the oatmeal simply place it in the microwave for 30 to 40 seconds. You can also freeze baked oatmeal. Cut the oatmeal into squares, then cover each square in plastic wrap and freeze for later use. Thaw the squares before reheating.
Do you have to refrigerate baked oatmeal?
Baked oatmeal contains dairy and eggs which means that it should be stored in the refrigerator. Cover your baking dish with foil or plastic wrap, then place the oatmeal in the fridge until you’re ready to enjoy it.
Oatmeal variations
The great thing about oatmeal is that it can be a canvas for whatever flavors you like.
Fruits: Try apples, pears, peaches, or strawberries in this dish. Spices: Swap out the cinnamon for nutmeg, apple pie spice or allspice. Mix-Ins: In addition to the fruit, try adding a handful of toasted shredded coconut, chocolate chips or nuts. Toppings: You can top the oatmeal with yogurt or whipped cream for a sweet and creamy finish.
