Growing up on the lake in Cleveland, Ohio, summers were spent outside swimming, running around with my brothers, and playing hostess with my grandma every chance I got. I’m pretty sure most of you know what a hot and humid summer is like. So, also know that refreshing drinks were always a must. My brothers and I would sip on the lemonade my mom would keep stocked in the fridge. It’s the one drink I truly associate with summertime. Anyone else? We’d often take fresh fruit, add it to a blender with the lemonade and some ice, and make homemade “slushies” (here’s a link to my adult slushie version!). I remember them being so refreshing and delicious. My summer memories are some of my favorites. I was the kid that LOVED summer and soaked up every single minute. Summers in Colorado are very different from the balmy, hot, and humid summers of my youth. But I’m still all about a refreshing summertime drink. The only difference now is a better brand of lemonade…and a splash or two of tequila. This fun blackberry lemon cooler is the easiest to mix up, so let’s get started on the details. Start off by muddling fresh blackberries with thyme to infuse the juice with a slight thyme favor. Then add your favorite silver tequila and shake. Strain the mix into a glass with ice and top off with Florida’s Natural Lemonade…a summertime staple in my fridge. The last step is optional, but I love making each drink look pretty by adding fresh berries and thyme. I highly suggest this step! I love keeping a jug of lemonade in the fridge at all times in the summer. It makes it so simple to create the easiest summer cocktails. Easy cocktails mean less time in the kitchen and more time outside in the sun, which I am certainly all about. The best part about this cocktail? It requires only four simple ingredients that I pretty much always have on hand in the summer. And If you don’t love blackberries? That’s no problem. This is just as refreshing and delicious when made with raspberries, blueberries, or strawberries! You could even muddle up some fresh cherries or peaches. Any of these would be great! To make entertaining a breeze, I’ve included recipes for both a single cocktail and pitcher style. The 4th of July is only two short days away, and this is 100% on my menu for Thursday! Though I will be doubling the pitcher recipe to serve my big family while we are vacationing in Costa Rica! I already know they’re going to love this lemon cooler. Lastly, for a festive 4th of July cocktail, make 3 pitchers of this lemon cooler, 1 with blackberries or blueberries, 1 with strawberries or raspberries, and 1 with white peaches. Then serve each pitcher next to each other for a red, white, and blue cocktail bar! Gotta love a delicious drink!
