To make caprese skewers you will need red cherry tomatoes, yellow cherry tomatoes, mini mozzarella balls, basil leaves, olive oil, Italian seasoning, balsamic glaze, salt and black pepper. How Do You Make Caprese Skewers?

To make this salad kabob recipe first thread cherry tomatoes onto skewers. Following the tomatoes place on the skewers small basil leaves and bite sized mozzarella cheese balls. Repeat as necessary. In a small bowl mix together extra-virgin olive oil, Italian seasoning, salt and pepper. Then drizzle the skewers with the seasoned olive oil and balsamic glaze. From there, simply place them on a platter, serve and enjoy!

Tips For The Perfect Caprese Skewers

Look for cheese balls, basil leaves and cherry tomatoes that are all about the same size to make the skewers easier to serve and lay on a plate. Ciliegine mozzarella is about the same size as cherry tomatoes. I use both red and yellow tomatoes for color contrast. You can use whatever cherry tomatoes are ripe and available. If you don’t have a bottle of balsamic glaze that is good for drizzling, place some glaze in a plastic bag. When you are ready to use the glaze, cut the corner off the bag and apply the glaze to the skewers. This recipe calls for Italian seasoning. You can purchase premade seasoning or make your own Italian seasoning. You’ll want to look for a bunch of basil with smaller leaves for this recipe. I actually used that “living basil” that comes with the dirt still attached because the leaves were small and tender. Balsamic glaze is basically balsamic vinegar that’s been reduced until it’s thick and syrupy. It’s sweeter than balsamic vinegar and it clings to the skewers much better than standard balsamic vinegar. You can find balsamic glaze (also called balsamic reduction) at most grocery stores near the regular salad vinegar.

Flavor Variations

While these caprese skewers are delicious as-is, you can change the dish to suit your own taste.

Mini: You could make mini skewers with toothpicks, pearl mozzarella balls and smaller tomatoes. Dinner Salad: To use these skewers as a dinner salad, simply place the components on larger skewers. To eat the skewers, provide forks so that guests can take the salad off the skewers. Tomatoes: You could use grape tomatoes, small pear tomatoes or even slices of firm Campari tomatoes. Garlic: Add a little garlic powder or minced garlic to the seasoned olive oil. Cheese: You could use other mild cheese like cheddar, Monterey Jack or fontina. You could also add some grated Parmesan cheese to the seasoned olive oil. Spicy: Try mixing in some red pepper flakes into the seasoned olive oil or sprinkle some over the top of the skewers.
