I make Mexican food at least once a week, my family always requests beef enchiladas, carne asada and this recipe from Chipotle for their famous guacamole. My kids are Chipotle fans, and I don’t blame them. Who can resist those grilled meats, fun toppings, and of course, the guacamole? My Chipotle guacamole recipe tastes just like the restaurant version, and you’ll be shocked at how easy it is to make. To make Chipotle guacamole you will need avocados, lime juice, kosher salt, cilantro leaves, diced red onion and diced jalapeno pepper.

How Do You Make Chipotle Guacamole?

To make this Chipotle guacamole recipe, start by mashing ripe avocados with salt and freshly squeezed lime juice in a medium bowl. Mash until your avocado mixture reaches your desired consistency. Next, add chopped cilantro, diced red onion and diced jalapeno to the bowl. Gently stir all of the ingredients together. Taste and add more salt or lime juice if desired. Garnish with fresh cilantro sprigs, then serve immediately.

Tips For The Perfect Dip

You can mash your avocados with forks or a potato masher. You want to mash the avocados until you reach a texture that you like. I remove the seeds and ribs from the jalapeno before I dice it. This keeps the guacamole on the milder side which my family prefers. If you like heat, add some chopped pepper ribs and seeds into the mix. Not a fan of cilantro? You can use sliced green onions instead, although the flavor will not be as authentic. This recipe can easily be doubled or even tripled if you’re feeding a large group of people. You can use this copycat Chipotle guacamole as a dip for tortilla chips, as a topping for Mexican food like burritos and tacos or as a spread for sandwiches or burgers.

Chipotle Guacamole Flavor Variations

While the classic Chipotle guacamole has just six ingredients, sometimes I like to change things up and add more items to make my own flavor combinations.

Vegetables: Feel free to add other veggies to the dip such as roasted corn, canned green chilies, diced tomatoes or sauteed bell peppers. Creamy: Stir in 1 tablespoon of sour cream for an extra decadent finishing touch. Spicy: Use a serrano pepper instead of jalapeno, or stir in a few teaspoons of minced canned chipotle pepper for a smoky and spicy kick. Toppings: Serve your guacamole with a sprinkle of crumbled bacon, cotija cheese or toasted pumpkin seeds.
