Using over-ripe bananas has never been as easy as using it for making this delicious, super moist and soft Eggless Banana Mug Cake. We enjoy a good eggless whole wheat banana bread and ever-favorite eggless banana walnut muffins at home, with our evening tea/coffee. And equally popular and delicious is a quick and satisfying 1-minute chocolate mug cake. But using banana in a mug cake?! I assure you that it is possible to make the best tasting moist cake in a minute and it doesn’t even take 5 minutes to get the prep done. It doesn’t require any special equipment except for one microwave safe mug and of course the microwave oven! This same recipe can also be in an OTG or convection oven, but it takes over 20-25 minutes to bake. If you want a single serve cake that gets done in a minute, this recipe for 1 minute microwave banana cake is the best kind of indulgence.
Ingredients
Banana – a small over-ripe banana that has a too many dark spots or can completely turned dark works really well. It acts as an egg replacer and also makes the cake soft & moist. It adds to the natural sweetness too, so the need for a lot of additional sugar is minimized. Flour – I used all-purpose flour for this recipe but whole wheat flour or any other whole grain flour too. It might lead to a slight dense cake, but otherwise the taste doesn’t differ much. Sugar – I powder the sugar so that it is easily dissolved and that the batter comes together quickly in a mug. The amount of sugar and the type of sugar can be changed depending on your preferences. Oil – any neutral oil works, as long as there is no strong fragrance or taste. This recipe does not require butter and oil-based cakes are much softer & moist in my opinion. You can also use melted butter if needed. Baking Powder – is used as the leavening agent for this microwave banana cake. Cinnamon Powder & Vanilla Extract – are added as flavoring ingredients, making the banana cake smell delicious and also add a cinnamon undertone to the microwave banana mug cake. If you do not like cinnamon powder, it can be skipped altogether. Salt – a pinch of it makes a big difference in any cake recipe and it helps bring out the sweetness better. Chocolate Chips – I love the flavor of oozy melted chocolate chips with the banana cake, it can be easily replaced with any chopped nuts like almonds or walnuts too. Top Tips
Using overripe banana and mashing it well without any large lumps makes it easier to mix the batter quickly. This recipe does not require any other liquid ingredients like milk or water, but if you find that the batter is too thick, add milk by a teaspoon at a time and adjust the consistency as it highly depends on how moist the banana is. While baking the cake in a microwave, always keep a close eye on the cake. An overcooked microwave cake tastes rubbery and dry, definitely not pleasant. Depending on the power of your microwave, choose to microwave the cake between 60-90 seconds and continue to cook in ten second intervals as needed. I had to microwave my cake for 90 seconds totally for it to cook completely. It is better to remove the cake from the microwave when the top still looks moist or undercooked but the sides look cooked. As the cake continues to cool down, it continues to cook. So, if you keep the cake in a microwave for more than 90 secs, parts of it will definitely be overcooked when you try it out. Always wait for the cake to cool down for 1-2 minutes before digging in or serving. Again, this is to ensure that the cooking process is complete and the cake is cooked all the way through. I find that filling the mug to half with cake batter ensures that the cake is perfectly cooked than filling the mug with batter upto ¾th. More cake batter means more cooking time and again, bottom part of the cake will be very dry. So choose a largish microwave safe mug to be on the safer side to make this vegan banana mug cake.
Substitutions & Variations
All-purpose flour in this recipe can be replaced by whole wheat flour or other whole grain flours too. Apart from the change in density of the cake, the color of the cake can be slightly different. If the batter is too thick or does not come together on replacing the flour, add milk or water by a teaspoon at a time to adjust the consistency. Chocolate Chips can be replaced or you can additionally use chopped walnuts, almonds or cashews to top of the cake before microwaving. You can also add 1-2 teaspoon of cocoa powder to make Vegan Chocolate Banana Mug Cake, if desired. If you do not have a microwave, you can use the same recipe to make vegan banana cake in an OTG or convection oven and bake it at 180°C for 20-25 mins in a pan or small muffin moulds as preferred.
Storing & Serving Suggestions
Eggless Banana Mug Cake is best served immediately as a single-serve dessert. It can be topped off with some vanilla ice cream or fresh whipped cream if preferred. It can also be served as tea-time accompaniment. It tastes good even after cooling down, but is preferably eaten the same day and not to be refrigerated or frozen.

Eggless Banana Mug Cake Recipe with Step by Step Pictures
In a large microwave safe mug add one small over-ripe banana. Using a fork mash it until it is smooth and without any large lumps. Next add 1 tablespoon oil and mix well until the banana & oil are well combined. Add 3 tablespoon all-purpose flour, ¼ teaspoon baking powder, ¼ teaspoon cinnamon powder, ⅛ teaspoon vanilla extract, ⅛ teaspoon salt. Next add 1 tablespoon powdered sugar. Gently mix everything well together making sure that there are no dry patches or lumps. Wipe down the edges of the mug if needed. Sprinkle 2 teaspoon chocolate chips all over the top, do not press them down. Set it in microwave oven at high powder for 80 secs, but check at regular intervals after 60 secs mark. If the top of the cake looks moist but the sides look cooked, remove it from the oven. Let it rest for 1-2 minutes, as it continues to cook in the residual heat. Serve warm as a single-serve dessert or tea-time accompaniment immediately.
Recipe Notes
Keep a close eye on the cake as it is baking and adjust the microwave oven timings as needed, each brand & make of the microwave oven is different and it is not possible to provide exact times for this reason. Check the cake after 60 secs but continue to cook in intervals of 10 secs until a total cooking time of 90 secs – not more than that.Fill the cake batter only to half in the mug, so that it does not take long time to bake in the microwave.This 1-minute microwave banana mug cake is aptly sweet and it also depends on how ripe & sweet the banana is. If needed, add upto an addition ½ tablespoon powdered sugar if needed.
