I can’t think of a better recipe for today. It’s the height of summer, it’s crazy hot, so humid (for most people), and the weekend is finally here. Therefore, this can only mean one thing, fun, fruity, and icy cold cocktails are a must. And this Mojito-Rita? It’s so darn good. 100% inspired by my trip to Costa Rica. And 120% what you need to be making tonight, tomorrow, and every other fun day from now until summer’s end. Slightly dramatic, but also true. Here’s the deal, typically Fridays here on HBH are all about desserts…and sometimes breakfast/brunch. Whatever the recipe it’s almost always something sweet. It might be a layer cake, cookie bars, pancakes, peanutty ice cream cake, french toast, or a fruit cobbler. But all the most delicious recipes are saved for Friday… Which brings me to this Frozen Mango Mojito-Rita. It’s not a dessert. It has nothing to do with brunch (well…maybe it does), but yet I felt the need to share it today. On a Friday. This means big things. If I share a recipe on a Friday, it’s what I think is one of the top recipes of the week. Meaning it checks off all of my boxes, exceeding my crazy high standards. Meaning, it’s DELICIOUS, oh so PRETTY, crazy SUPER SIMPLE, a recipe fit for the weekend, and all around FUN. This recipe is all of those things. So, cocktail Friday it is. Just this week. Promise, come the fall it’s back to all things cocktail Saturday. I’m already plotting out this fall’s drinks. As I mentioned, the inspiration for this fun drink came from my recent trip to Costa Rica. We stayed in the little town of Playas Del Coco, or Coco for short. They had mom and pop restaurants (some of them Italian, which we all found odd, but greatly enjoyed), roadside fruit stands, black lava beaches, and a little beachside bar and grill called, Father Rooster. For any of you have spent time in the town of Coco, you know that Father Rooster is certainly the place to be. Live music, island-style food, and the best house-made cocktails. My family spent maybe half of our vacation at this spot. It’s a Gerard kind of place. And the drink order of choice? The Mojito-Rita. Obviously. If you’ve never had a Mojito-Rita, it’s exactly what it sounds like, part mojito, part margarita, all things GOOD. Why is Father Rooster’s Mojito-Rita so special you ask? Two things. Thing 1: It’s made with more mint than you’d think you’d ever need in a drink, but oh my gosh, it’s perfect. Thing 2: It’s frozen. Frozen drinks equal better drinks. The girls in the family must have ordered countless Mojito-Rita’s in the days we had on the beach. It was a favorite. Consequently, the only thing that everyone agreed I must recreate from our trip…the Mojito-Rita. SO. HERE. IT. IS. My version is simple, very similar to Father Rooster’s, but made a touch more fruity with the addition of mango. The sweet details. First, rim your glasses in salt. While optional, this is a game-changing step. You can never go wrong with a salty cocktail rim. Second, combine everything…good tequila, so much lime juice, frozen mangos, honey, and all the mint you can find. Blend, blend, blend. Add ice and blend some more. Three, pour into your salt-rimmed glass and top with sparkling water. Four, drink and enjoy. Simple as that. And now you see… The most perfect Friday recipe that you can enjoy throughout the weekend and on all the hot summer days to follow. Major bonus?
