Another Friday, another drink. Last week we had my favorite iced brown sugar latte. And this week, well, we’ve got something icy yet again, but boozy too. I usually reserve my cocktail posts for Saturday. But in the summer, when everyone is either off traveling or out having fun on the weekends, I figured Friday is probably best. This way we have plenty of time to hit the store before the Saturday morning crowds. Plus, the honest truth? I know peach season is sweet, but it’s also short. So I wanted to share this recipe right away. This way we can make these fun slushies from now till summer’s end.

Jumping on in – here are the details

You’ll need lots of frozen peaches, a bottle of your favorite Rosè…or fruity white wine, some honey, thyme, and fresh peach slices. Since peaches are at their prime right now…and I had a fresh box from Frog Hollow Farm (located outside LA). I decided I’d just freeze my own peaches. Yes, these peaches are SO GOOD that I’ve actually been looking for new ways to enjoy them! Last week I shared I shared a peach sherbet, and today we have boozy slushies! You can easily use store-bought already frozen peaches too. But fresh peaches are the way to go for the very best flavor and color.

Make the honey thyme syrup

To lightly sweeten the slushy and infuse it with subtle notes of thyme, I made a quick honey thyme syrup using fresh peach slices, thyme, and honey. Just simmer the peaches together with water, thyme, and honey until the peaches are soft. Then strain the syrup, discard the peach pulp and thyme, and now you’ve got a lightly sweetened peach thyme syrup.

Now…let’s make some slushies!

Add those frozen peaches to a blender. Pour over the wine. Add the sweet peach thyme syrup and a handful of ice. Blend, blend, blend until the mix is a yummy slushy consistency. NOTE: It really helps if you have a high-powered blender or food processor for this. I like to top each drink with a fresh or frozen peach slice and sprig of thyme. And then that’s it. So simple, but so icy cold and refreshing! Great for all the remaining summer weekends ahead. The bottom line here?
