Sometimes you want something comforting and at the same time, the one that requires less effort right?! Today’s recipe is such a one pot meal. When I am in total lazy mode, I go onto make some simple one pot rice recipes. Golden Onion Rice is a fragrant rice recipe with some of my favorite whole spices and golden fried onions on top. I wanted something light to go with my Dal Makhani and this seemed apt. I absolutely love it when each grain of rice stands out distinctly and is pure white in color 🙂
Basmati rice cooked to perfection with whole spices and onions fried in ghee, does this rice recipe get fragrant or what?! While this cannot be had on its own unlike the other one pot meal recipes, it goes really well with any spicy Indian curry. If you are as big as a lover of onions as I am, this sure would be the recipe for you to try. For a richer version, golden fried cashews can be added. Now onto this super simple recipe.
In a bowl, wash and soak the basmati rice in 2 cups of water for atleast 15-20 mins while preparing the onions.
Heat 1 tablespoon of ghee/clarified butter. Add sliced onions and fry on medium flame until they are golden brown in color. Add a pinch of salt, mix well and remove from heat. Remove the onions onto a plate and set aside.
In the same pan, add the 2tsp of ghee. Add the whole spices – cloves, cardamom, dried bay leaf and cinnamon. Fry for 10-20 secs. Add the water used to soak the rice. Add required salt, mix well. As the water comes to boil, add the rice. Mix well.
Keep the pan covered with a lid and cook on low flame for 8-10 mins until all the water is gone and rice seems cooked. Remove from heat and don’t disturb the rice for another 10mins.
Sprinkle fried onions on top and serve hot with Dal Makhani/any spicy curry.
For a spicier version, add slit green chillies. Additionally, fried cashews can be added as well. I usually use 2 cups of water for 1 cup of basmati rice while cooking in open pot method. Adjust as per your measurements. Using ghee/clarified butter gives a good fragrance to the rice. Oil can be substituted as well.
