When the weather is nice, I love to grill vegetables to go alongside our meals. Some of my favorites include potato foil packets, grilled asparagus and these fabulous grilled mushrooms.

When I’m looking for an easy side dish to go alongside steak, chicken or fish, I often turn to these grilled mushrooms. The mushrooms get almost caramelized by the heat of the grill, and they’re coated in the most delicious garlic butter sauce. This dish is sure to earn you rave reviews!

How do you make grilled mushrooms?

The first step in this recipe is to thread your mushrooms onto skewers. The mushrooms get brushed with a little olive oil, salt and pepper, then go onto the grill. After the mushrooms have cooked through, they get brushed with a garlic and herb butter. Serve your mushrooms immediately and enjoy!

Tips for grilled mushrooms

I typically use button mushrooms in this recipe, but cremini mushrooms would also be a great choice. Look for mushrooms that are approximately the same size and shape so that they cook at the same rate. If you’re using wooden skewers, be sure to soak them in ice water for 20 minutes before you add the mushrooms so that the skewers won’t burn on the grill. If you don’t want to cook your mushrooms on skewers, you can use larger button mushrooms or even something like portobello mushrooms, and put them directly on the grill grates. Another option is to use a grilling basket. The mushroom skewers can be assembled up to 8 hours before you plan to grill them. While I typically use parsley in the garlic butter, other great herb options include chives, dill, thyme or basil. If it’s cold outside, you can make your mushroom skewers indoors on a grill pan, or cook them under the broiler.

While this recipe is written for mushroom skewers, you can add other ingredients to your skewers to make mixed veggie kabobs.

HOW DO YOU CLEAN MUSHROOMS?

The best way to clean mushrooms is to use a damp paper towel to gently rub each mushroom. You can also rinse your mushrooms in a colander, but be sure to rinse them briefly; do not soak them in water. Slice the very ends off the mushrooms off, then you’re ready to use your mushrooms.

Are mushrooms good for you?

Mushrooms are full of nutrients including antioxidants, Vitamin B, Copper and Potassium. Mushrooms are low in calorie, low sodium and low in carbohydrates. In this particular recipe, the mushrooms are coated in butter which isn’t the healthiest option. If you’re looking to reduce the calories, you can cut the amount of butter in half. I make these mushrooms almost every week during the warmer months – they’re just that good! They pair perfectly with almost any type of protein and are an unexpected yet welcome addition to any barbecue.
