Actually, breakfast or dinner too! This is one of those meals that can be eaten at any given point throughout the day. Gotta love those. Although, if you are my brother Creighton, basically ANY food can be eaten at any given point throughout the day. Whatever Creighton eats for dinner is fair game for another meal. Meaning that I am 99.9% sure that he has eaten lasagna, steak and chicken noodle casserole all for breakfast, multiple times throughout his life. He is so weird.
And he is also getting on my last nerve. I need my own house already. It is so time. The barn could not happen fast enough.
Anyway, this is the toast I have been dying to share with you ever since I posted the Harissa recipe. And the only reason the Harissa happened was because of this toast, and the only reason this toast happened was because I desperately needed another excuse to make avocado toast + eggs. I know I said this back when I posted this sandwich, but I make avocado toast all the time. Most of the time it includes a fried egg and some form of cheese melted over-top. Super simple, but I swear there is not a better quick meal than that.
Plus, we all know that eggs make everything better. Pretty sure I could put fried eggs on most dishes and everyone would love it. Well, obviously not on desserts because that would just be gross, but when in doubt I put an egg on it. If I am worried that whatever I made is just not that good, I put an egg it. If I took photos of a dish earlier in the day, but come dinnertime it is just not looking so good, I put an egg on it. If I am trying to hide the beans, veggies and or parts of the dish I burnt (I do this more often than not when re-heating), I put an egg on it. So yeah, I think you get the point. Eggs dig me out of food problems… quite often.
Typically I fry my eggs and leave the yolk just a little runny. Ok well actually, I normally let my dad make the eggs, unless I am taking photos of them, because he makes the most awesome eggs every single time. But being the perfectionist that I am I have to make the eggs I photograph because I would probably kill him for every bad-looking dimple the egg had. I have the hardest time making fried eggs not look totally disgusting, so I went with the poached egg for these. Also, my bread was tiny, and a fried egg would have covered up all the good stuff underneath. So poached it was.
You can do whatever kind of egg you prefer. The rest is pretty simple. One important thing though? Good bread. You gotta have a good crusty bread for toast. I prefer a whole grain loaf with tons of seeds, but whatever you love will work.
Then you have to get some good Harissa. You can make it in under thirty minutes like I did or you can just get some from the store. I love the Mina Harissa Brand and think it is pretty good, but when you make it yourself you can customize it to your taste. This I personally love! Obviously, you will need some good avocados. I also added some sun-dried tomatoes because I love those too.
Oh, and you need goat cheese. AND a drizzle of honey. The honey helps balance out the spiciness of the Harissa. So dang good. Even better if you have work off today and can enjoy this while catching up on all the TV shows you never have time to watch. Yes.
