The first step is to thinly slice the sweet potatoes. Start by putting a potato on a cutting board with a chopstick on either side. Cut 1/4 inch slices across the potato. The chopsticks will keep your knife from cutting all the way through. Repeat the process with all of the sweet potatoes, then put them on a prepared baking sheet. Mix together the olive oil, butter, salt and pepper, and rub the mixture all over the potatoes and in between the slices.
