Summer pizza day – our first of the season! I think this time of year is my favorite for pizza making. Pizzas are so quick and easy and I love the opportunity to use fresh summer produce and herbs. The topping ideas I have brewing in my head are endless. Also, nothing beats a roasted tomato pizza with fresh burrata cheese. I know it’s a tried and true classic, but we love to make it over and over all summer long. It’s just so delicious! Incorporating caramelized onions and fresh herbs only adds to the deliciousness. They make the pizza feel just a little more special. I’ve been making this pizza summer after summer for years now. The ingredients have stayed the same, though my herbs do vary, but the process has been streamlined. I think I’ve kind of perfected it! So, so excited for you all to make this one!

Now some details

Step 1: the dough  I use the dough recipe from the HBH Every Day cookbook. It’s my go-to and the pizza dough I use almost every week when we have pizza night. Simply mix warm water with yeast, then add flour, bread flour, and salt. I knead the dough with a stand mixer for about 5 minutes, then let it rise for an hour or so. And then it’s ready to go, nothing fancy! Step 2: the onions and the tomatoes Before I add the onions and tomatoes to the pizza dough, I like to caramelize them in the oven. This really intensifies their flavor and makes them even more delicious. Toss the onions with cherry tomatoes and big, big handfuls of fresh herbs. I use thyme and oregano with a nice pinch of chili flakes. Then I also like to add some honey. The honey helps to caramelize the onions and add a little sweetness to those roasted cherry tomatoes – totally delicious. Step 3: assemble  Now that we’ve pre-roasted the onions and tomatoes, we can assemble the pizza. Gently push the dough into a nice big circle. Then add the onions and about half of the tomatoes, and then the cheese. I’ve been using a creamy gouda lately and it’s just delicious. Finish the pizza with the remaining tomatoes. Step 4: bake Cook the pizza at a super high temperature, ideally on a pizza stone if you have one. It will take 10 or so minutes to cook up. When the pizza comes out the cheese should be bubbling up around the tomatoes. Step 5: the burrata  Add the burrata to the hot pizza. Let the cheese sit for a few minutes to really melt into the warm pizza. Now add fresh basil and some oil. I like to do a few more chili flakes too. Then simply slice it up! This pizza is perfect on a warm night with your favorite drink in hand, preferably shared with your favorite people. Because everyone likes a good slice of cheese pizza with friends! This one is meant to be eaten hot, so enjoy every last bite! Family and friends will LOVE this pizza with its crispy cheesy crust, tomatoes, pepperonis, and herbs. The cheese in the middle is super melty too! Oh, and don’t skip out on adding a little honey on top (it’s mine and Asher’s favorite). It makes every bite really, really good!
