Happy Day Before Thanksgiving!! We’re down to the very last minute, so I thought I’d share a simple, easy, last-minute appetizer with you guys. I’m not sure about your family, but my family loves appetizers. They tend to be some of our favorite recipes of the night…these sweet and savory bacon twists are my brother’s personal favorite. But me personally? I LOVE a cheese board. And when I say cheese board, I mean a really good, cheese board…with the works. I always go all out with my holiday cheese boards packing them to the brim with my favorite cheeses, crackers, meats, nuts, spreads, fruits, and everything else in between. They’re one of my favorite appetizers to create for family and friends. But guys, this year’s holidays look different for so many of us. And while I love my giant party size cheese boards, I wanted to be able to give you all a recipe that was a little smaller-scaled and handheld! Yes, we might not be having the huge Thanksgiving dinners we’re all used to, but we can still enjoy our favorite foods…just on a smaller scale! The inspiration? My cheese board!! The truth is I will still be making a cheese board this year, because, for me, it wouldn’t be Thanksgiving without one, and I love tradition. But, as I said, I know many of you have fewer people attending Thanksgiving this year. These bites are perfect for a smaller crowd! These crackers are kind of like a cheese board, just all in one! And the added bonus? No need for everyone’s hand to be touching every single cracker. Just grab one and go!
The (very) simple details.
So, these might just be one of my simplest, easiest recipes…but yet? I LOVE it so much. Snacky foods have really become some of my favorites these days. I’m loving combining, salty, sweet, and savory flavors to create a small bite that’s hard to put down. Here’s how these go. First, locate some good ricotta cheese. You’ll want to use a whole milk ricotta for best flavor. Now, whip that ricotta either in the food processor or blender with just a touch of honey. Trust me on the honey. It’s the perfect sweetness that adds so much flavor to any kind of salty cheese. Once the ricotta is smooth and creamy, it’s “whipped”.
Next, crackers! Use any cracker you love most. Something crisp and crunchy is great. I love to use Raincoast Crisp Crackers which I pick up at Whole Foods. The fig and olive or hazelnut cranberry crackers are my favorites! Or, go the buttery cracker route and use Ritz…which truthfully are SO DELICIOUS. I love a Ritz cracker and have no shame in admitting it. They not fancy, but they’re good. Once you have your crackers all worked out, it’s time to assemble. Layer the crackers with a fig preserve (totally optional, but I love fig anything). Then dollop on the ricotta, add a little salty prosciutto, a sprinkle of pomegranate arils, and finish with a drizzle of honey and some fresh thyme. Simple. Simple. And so delicious. Each bite has a little crunch and a little creaminess. It’s lightly sweet and perfectly salty with a juicy burst from those pomegranates. Everything we love most on a cheese board, but all layered onto a cracker…the most perfect two-bite snack.
And that’s my simple step-by-step. Nothing fancy, but when it comes to last-minute holiday recipes, they really should be simple. And the fun thing about simple recipes? They tend to be everyone’s favorites. Soo, fingers crossed you still have a little wiggle room in your Thanksgiving menu to include these pretty bites.
