I’m all about the easy chicken recipes and this Italian baked chicken is quick, simple and super flavorful. Add some roasted broccoli or green bean bundles on the side and dinner is served! Chicken. It’s what’s for dinner so many nights of the week at my house. I love this Italian chicken because it has minimal prep work, tastes great, and you can even throw potatoes and veggies in the oven at the same time for a one pan meal.
Italian Chicken Ingredients
To make this recipe, you will need boneless skinless chicken breasts, parmesan cheese, breadcrumbs, garlic, Italian seasoning, salt, black pepper, butter, potatoes and fresh parsley.
How Do You Make Italian Chicken?
Preheat the oven, and coat a baking pan with cooking spray. Place the breadcrumbs, parmesan cheese, garlic, Italian seasoning, salt and pepper in a medium bowl, then stir to combine. Coat the top of each chicken breast with melted butter, then dip the buttered chicken into the breadcrumb mixture. Place the chicken on the pan, then arrange the potatoes around the chicken. Drizzle the remaining butter over the potatoes, and season the potatoes. Bake until the chicken is done and potatoes are tender. Add some fresh parsley and serve.
Tips For The Perfect Dish
Choose chicken breasts that are similar in size and shape so that they cook at the same rate. This recipe assumes you are using 4-6 ounce breasts. Boneless skinless chicken thighs will also work. This recipe has a short ingredient, which means quality really matters for the best flavor. I recommend using freshly grated parmesan cheese as it tastes so much better than the shelf stable kind in a can. I typically use baby Yukon Gold potatoes in this dish, but other types of potatoes will also work just fine. Leftovers will stay fresh in an airtight container in the refrigerator for up to 3 days. Reheat the chicken in the oven to crisp up the crust. You can add a salad or vegetable on the side such as grilled brussels sprouts, sauteed broccolini, roasted pumpkin or cauliflower casserole. Since this recipe already contains potatoes, you really don’t need a rice or pasta dish to go along with it. No parsley on hand? Use different fresh herbs such as basil, thyme, oregano or rosemary.
Italian Chicken Flavor Variations
You can easily customize this dish to your taste preferences, there are so many different ways to dress up your chicken!
Breadcrumbs: Try coarser panko breadcrumbs instead of traditional breadcrumbs. You can also use flavored breadcrumbs such as Italian style breadcrumbs. Flavorings: Amp up the flavor in your chicken by adding extra spices to the coating such as garlic powder, onion powder or smoked paprika. Vegetables: Feel free to add some veggies to the sheet pan along with the potatoes. Some great options include carrots, butternut squash, spinach, mushrooms, broccoli or green beans. Toppings: Try sprinkling 3/4 cup of shredded mozzarella cheese over the chicken and potatoes during last 5 minutes of the baking time. Some other great toppings include green onions, sun dried tomatoes, a drizzle of flavored olive oil or toasted pine nuts. Sauce: Feel free to serve some sauce on the side to dip the chicken into, such as homemade marinara sauce.
This is a very simple dinner, but a satisfying one. It’s one of those meals I turn to when I have a package of chicken in the fridge but am otherwise out of ideas. I love that it’s mostly hands off, simply pop your sheet pan into the oven and go about your evening until it’s time to eat!
