The time when we get to talk tacos and margaritas for the next week straight. OKok, fine we talk tacos and margaritas a lot around here already, but with Cinco de Mayo on Friday I wanted to share a few of my favorite Mexican…ish recipes. It’s definitely no secret that I love Mexican food. I’ve posted one too many Mexican inspired recipes in the last few weeks, I actually started talking about Cinco de Mayo in March. To me, Mexican food is just all around good. The fact that all of my family will happily eat anything Mexican is a huge selling factor for me. I mean, when you can get the whole fam to eat something, you stick with it! This year I’ll be celebrating Cinco de Mayo in Utah, as I’m headed there on Friday for a conference. Trust me though, somehow in some way, I will be celebrating!
