As I always say, Friday’s require chocolate, and these brownies are on the menu today. I’m pretty excited about them too…and the fact that it’s Friday…and that the sun has been shinning brightly since Wednesday…yes, it’s been awesome! I always forget how much energy the sun can give me. Don’t get me wrong, I love a good, snowy winter day when you can just kind of chill, wear bulky sweaters, drink mug after mug of coffee or hot chocolate, and then snuggle up on the couch by the fire at night. Those days are awesome, but let’s be real, most of the time when it’s cold and snowy, we still have to work. And for me, it’s always just a little bit more difficult of a day. When the sun is shining though, its major go mode and it feels so good. Let’s just say that after a week of on and off snow, these last three days of sunshine have been awesome and so productive. I love ending a long week feeling like much was accomplished, it makes the weekend just that much better. Also, all the sunshine has me feeling all the spring vibes…as you will see in my upcoming recipes! It’s still really, really cold, but the sun plus my purple tulips, currently sitting on my kitchen counter, are making me feel like spring is on the way…which I guess it is! I can’t believe it’s already March. <–craziness.
Speaking of March…ST. PATRICK’S Day is right around the corner! I find it really odd, but St.Patrick’s day is one my brother Creighton’s favorite holidays. I don’t fully get it, but he seems to have embraced his Irish roots more than the rest of us. But now that I think about it, he did do a semester in Ireland and even met up with extended family there. so maybe it does make sense. Anyway, I always love creating fun holiday themed recipes and these brownies are probably the highlight of my St. Patrick’s Day recipes this year. I’m not planning on posting a whole lot of Irish inspired recipes, so I wanted to make sure that the ones I do share are kind of awesome. And trust me, these brownies are awesome. Addictingly awesome. Sidenote: do you call it St. Patrick’s Day or St. Patty’s Day? I know some people have a serious thing about calling it St. Patty’s Day…what’s your opinion?? I always use St. Patrick’s Day, to me it just sounds better. Plus, I’m not huge on abbreviated words, most of the time I can’t figure them out.
OK. So let’s talk one bowl brownies! If you ask me, brownies are one of the easiest desserts to make. Cocoa powder, flour, eggs, sugar, butter, vanilla. That’s pretty much all you need for a good brownie. No leavening agents, no chilling, nothing hard. Um, yes please! For me, creating a one bowl, 8 ingredient brownie was kind of just a no brainer…well, honestly it kind of just happened. I realized once I finished developing the recipe that it was all made in one bowl and with just 8 ingredients. Cool. cool. I’ll take it! So what’s the secret here? Coffee and Baileys. <–aka the combo that’s always a winner.
Here’s how these brownies break down… …butter …sugar …Baileys …eggs …cocoa powder …flour …coffee And this is optional, but highly recommend…chocolate chips. Simple as that.
Honestly, these are the BEST brownies, fudgy, flakey on the top and filled with amazing chocolate flavor, thanks to that touch of coffee and generous amount of Baileys. The only bad thing about these brownies? The fact that they can be made, baked and ready for eating in about thirty minutes. Meaning these brownies can be a dangerous (but delicious) recipe to have in your back pocket. And if eaten warm…oh my gosh, there is no stoping. <–fair warning. Alright, Friday night plans? Brownie making, pizza eating, TV watching, brownie eating. Yup. Count me in!
