Easter is this Sunday, and while I previously shared My favorite Easter Recipes with you all, there’s always room at the table for additional food, especially appetizers. And trust me, you’ll want to make these. When I had this idea the other day I was so excited to create the recipe and share it with my family. I knew they would love these simple rolls. I don’t often cook with phyllo dough, so they felt fun and different. When I think of Easter, I always sway towards Mediterranean and Middle Eastern flavors. Feta and phyllo dough are commonly paired together in Greek cooking, so I knew the combination would be delicious. I wanted to add a little sauce, and honey is always my go-to when serving feta as an appetizer. The sweetness really balances out the saltiness of the cheese.
Working with phyllo dough
Phyllo dough can be intimidating to work with. But as long as you keep the dough covered with a damp towel while working, it’s not difficult! Because phyllo is so thin, it tears easily, so just go slowly while assembling. And as I said, keep the dough covered. When phyllo dries out, it cracks and becomes hard to work with. Also, you should know that your first roll will not be perfect. But have extra sheets of phyllo on hand and by the end, you’ll have the rolling perfected.
Details
Start by combining the feta, dill, and garlic. Then add some olive oil to a bowl for brushing. Use the oil when you feel like the dough is getting dry, it will keep it wet. Lay the phyllo out, add the feta, and then tuck and roll like a burrito. It’s not fancy, I promise! Brush each roll with olive oil before baking, then bake until golden.
The sauce
While baking, make the honey sauce. I did a spicy chili butter honey sauce with just a little oil, butter, chili flakes, and cumin seed. You can cook the spices in the butter and oil to really bring out their flavor before adding the honey. The spiciness and sweetness really balance with the salty, herby flavors in the rolls. I love to serve these warm, but they’re delish at room temperature too! And if you want to prepare the rolls ahead of time and bake off before guests arrive, that works too! Just keep the pan covered until you’re ready to bake. These will be so perfect for Easter Sunday, Mother’s Day, and anytime you need a quick, simple, and different appetizer!
