Though, I am partial to taste and texture of traditional, deep fried crunchy mathri, I did test the air fried version and was quite happy with the results. At the time of panic, I thankfully remembered Srividhya’s Baked Falafel recipe and had some chickpeas at home too! 🙂 I slightly modified her recipe and the result was extraordinary. Since I didn’t want to make something again for the dinner that day, I ended up making couple of bigger patties that could serve as burger patties. I had some iceberg lettuce with me and with a teaspoon of eggless garlic mayonnaise, we had super yummy falafel burgers – with a fraction of cost from what one spends at popular joints and needless to say, these were made with just a teaspoon of oil – hence much healthier compared to the deep fried patties from outside....

Some foods looks especially pretty on camera (i.e ravioli, cookies, bagels) and some foods just don’t. I think this is one of those foods. But it tastes good. Really good. Homemade buffalo sauce mixed with cheddar cheese and blue cheese to create a creamy and delicious alfredo-like sauce! One word. Yum. I am embarrassed to say how easy this pasta is. It comes together in less than and hour! But with all the hustle and bustle of the holidays I figure it is perfect for those busy holiday weeknight’s we are all experiencing right now....

Come late spring, I find the most inspiration from fresh herbs and flowers. The perkiness of their leaves and their bright colors give me so many ideas. Their inspiration is a welcomed change of pace after a very white and cozy winter. Where we live in Colorado, it’s just barely starting to get green. There’s still a fair chance we’ll get a sprinkling of snow. We had a snowstorm on June 18th a couple of years ago....
I know, who the heck has only ever had ham twice? Well, me. I grew up thinking ham was for weird people, but like so many times before, I was so wrong. Ham is beyond delicious, or at least this chipotle pineapple jerk glazed ham is, and the leftovers are amazing!! Especially with a house…or two, full of people. When I get stuck creatively, I try to look at flavors and foods just slightly out of my comfort zone. I tend to fall back on cozy foods…pastas, creamy soups, and pretty much anything roasted. Those are my go-to’s and very much in my comfort zone. This is why, when I get in a recipe rut, I love to step outside my box, and explore flavors I don’t use as often as I should....
You all! I looked at the calendar a few days ago and was shocked that we’re basically a week away from Memorial Day. How did that happen? This month flew by. It felt long, but at the same time, I just blinked, and now it’s almost summer! Wow, I’m excited! I really need those long days, warm nights, sunshine, and humidity – I love it all. I’m so excited for summer....
