Literally. I have got less than twenty-four house till I leave on a 6:00am flight tomorrow morning. That means I need to be up and out of here by 3:00am for the hour and half drive down to Denver, where I then have to park the car and catch a shuttle to the airport. So fun right?!I finally decided to just stick with the fam and go to Oregon, so I am not just leaving for a week, I am leaving for the whole summer....

They need to be big, packed with fall goodness, topped with cheesy beer battered onion rings and finished off with an egg. It’s the only way. It’s still a totally trashy burger, but healthy because um sweet potatoes, beans, quinoa, onion rings and eggs. All healthiness. All delicious. Don’t you just love when that happens? I certainly do. So today, I really don’t have a lot of words flowing from my brain to my finger tips....
I’m a fan of anything Mexican food, we eat plenty of white queso dip and burrito bowls in my house! This hearty taco salad is a family favorite, it’s colorful, fresh and super easy to make. We eat a LOT of Mexican food around here – it’s typically quick to make and easy to customize to the kids’ taste. We kind of got into a burrito rut and I was trying to think of something to change it up a bit which is how I came up with this taco salad....
My family loves Japanese food including restaurant classics such as yakitori, shrimp tempura roll, and any dish that involves teriyaki sauce. I often keep a jar of this sauce in my fridge for quick and easy meal options. In my opinion, homemade sauces and seasonings taste way better than the store bought versions. My teriyaki sauce is packed with flavor, and best of all, takes just minutes to put together....
And do you remember how I said that I was researching some Cuban food?? While here it is, and I could not be more pumped to share it with you guys! For starters, Cuban food is where it’s at. Citrus, lime cilantro, rice, pork, plantains, beans, PINEAPPLE?!? Yes, all my favorites. You should have seen me trying to narrow down exactly what I wanted to make. Today is the day! The cookbook is here! The Half Baked Harvest Cookbook is officially out for the world to read and cook from! Oh my gosh, I can hardly believe it! I don’t know about you, but I feel like as soon as December 1st hit, life got crazy busy! We have 4 different holiday events in one day this Saturday, it’s hard to find the time to breathe let alone eat! These turkey roll ups are the perfect meal or snack to fuel you during the holiday season, and they also make a great party appetizer! I make my own sauces and condiments whenever possible, because they taste SO much better than the store bought versions. Some of my favorite sauces include homemade teriyaki sauce, fresh and flavorful marinara sauce and this delicious hibachi style creamy sauce. For special occasions we often head over to the local hibachi restaurant. My kids love watching the food being cooked right in front of them, and I love all the juicy and tender meat and seafood!...
Over the past week I’ve realized something, I seem to go through “food phases”. Sometimes I’m all about tacos and all things Mexican. Other times it’s Italian, and pasta this pasta that. I’ve noticed this before, but I get stuck in a “food phase” and I tend to just roll with it until I get bored. I’m not complaining, because you can never have too much Mexican or too much pasta, but I realized recently that I hadn’t made any kind of fish or seafood in ages because I’ve been in Italian food go mode, example one and example two....

I love a good pork chop to make dinner time special. Some of my favorite preparations include baked pork chops with garlic butter, mushroom smothered pork chops and these amazingly delicious air fryer pork chops. Love air fryers as much as I do? Today I am sharing a humble side dish for daily Indian Bread like Roti or Phulka made with three vegetables – Aloo Gobi Matar. A dry version of potatoes, cauliflower and green peas curry seasoned with Indian spices makes for a very comforting meal when served with plain rice, dal and chapati. With three main vegetables, this curry can be made gravy style or stir-fry style. Obviously I chose to make a dry version, which was very delicious with ghee smeared phulkas....
