It’s that time of year again – football time! My husband is a big football fan and we love having friends over to hang out on Sunday afternoons – the guys watch football, the women chat in the kitchen and the kids play hard. Of course, being a food blogger and all, I always make sure that there are good eats to be had. The kids are happy with fruit and crackers (preferably shaped like animals) but I like to do something fun and a bit unexpected for the adults. I think these pork kabobs are pretty much the perfect game day food – they can be eaten as finger food for a snack or paired with pineapple cilantro rice for a heartier meal. One thing’s for sure – they pack a spicy punch, in the best possible way!

How do you make pork kabobs?

  The first step in this recipe is to marinate the pork. Imarinated cubes of pork tenderloin in pineapple juice, honey, olive oil and hot sauce. The pork was then threaded onto skewers with pineapple and red peppers before it was grilled to perfection. While the pork kabobs were on the grill I cooked up a pot of rice and seasoned it with lime juice, cilantro, chopped pineapple and more hot sauce – we like things spicy around here!

The sweet marinade pairs well with the hot sauce and the kabobs were not overly spicy – they definitely have a kick, but it’s a pleasant level of heat. The rice makes a great companion for a complete meal or skip the rice and serve up a platter of the kebabs as an appetizer or hearty snack, they’re perfect to eat while you’re watching the game.

Our friends absolutely loved these pineapple pork kabobs. Nothing beats the taste of grilled meat and the sweetness of the pineapple was perfect to offset a bit of the heat from the hot sauce.
