I thought these raspberry fools were kind of perfect for today. I mean, I’m not playing any pranks, but the name was fun, so I went with it! If you’re unfamiliar with a fool, it’s a REALLY simple dessert, consisting of fresh fruits and cream. Honestly couldn’t be any simpler. In fact, it’s so simple that I hesitated to even post it…yes, this recipe is that easy. But then after much deliberation I finally decided to just go with it. Okay, that and maybe mom and Lyndsie nudged me in this direction as well. Sometimes I just need a good push before I can fully commit to a recipe. I know, weird, but I can’t lie, I put A LOT of thought into my recipes. Most of the time way too much, but I can’t help it, I over think everything. It’s my best and worst quality.
Ok, so a simple dessert calls for a simple post. Oh but wait, question: what do you guys even think of April Fools’ Day? Typically for me, at some point in early April, I’ll realize that the day has come and gone. I’m kind of bad with jokes, so maybe that’s why I don’t think much of April Fools’ Day. Even as a kid, I really never gave it much thought. But hey, do any of you guys have some fun with it? I know a lot of people come up with some clever pranks, anything I should try out this year? For some reason the only thing that comes to mind is the one where you put plastic wrap on the toilet seat. I think I learned about that one back in middle school…always thought it was kind of gross though. Not funny just gross. But that’s just me, a little too serious. Try and tell me a joke and I’ll probably stare at you with confused eyes, it’s horrible. ANYWAY, these raspberry fools!! Thankfully, they are nothing to joke about. SIDE NOTE: does anyone know why they are called fools?? Kind of an odd name for a dessert don’t you think? Though these seem simple and pretty basic, I promise you that they are also delicious. Trust me, I would not be telling you about them if they were just so, so. I guess it’s just that combo of fruit and cream, it’s always soo good. For my fruits, I went with a combo of mashed raspberry + mango + blood orange. While I adore this combo, you can really use whatever fruit you have on hand. Strawberries, blackberries and blueberries would all be great options in place of the raspberries. You could use pineapple or passion fruit in place of the mango and any citrus in place of the blood orange. Other fruits that would also be delicious would be fresh peaches in the summer, figs in the fall and pomegranates in the winter. And of course bananas would work anytime of the year. Really, you can make these with whatever you have on hand, and that’s what makes them so great. You just need heavy cream and fruit… simple as that. You can be super casual and throw everything into a serving a bowl topped with fresh berries, or dress them up in fancy parfait glasses, either way they won’t disappoint! Of course, me being me, I had to add a little something extra. Enter the honey butter croissants. Oh yes, oh yes. Toasted, sweet, buttered croissants. Amazing. Especially when paired with whipped cream and fresh berries. It’s like brunch food meets dessert food, and it’s the BEST.
If you are trying to make a bit of a healthier dessert, you can skip out on the croissants, but I mean come on. It’s April Fools’ Day AND it’s Friday, and as far as desserts go this one is pretty LIGHT. I’d say go for the croissants…the two are pretty incredible together. Also, they would make for the most EPIC ice cream sundae topping, just saying. Finally, a lot of you have been asking about the edible flowers that I’ve been using. I used chamomile in these photos, but I also love using lilacs, lavender, pansies, orchids, herb blossom (dill flowers, fennel buds, cilantro flowers, basil flowers, radish flowers), roses and nasturtium… I could go on and on. I have been ordering some of the flowers online, but Whole Foods sells them as well! 🙂 Just check in the produce section, they come in plastic packaging along the wall where herbs are located.
