I like to serve a variety of dips when I have people over, I often make queso dip, chicken Alfredo dip, and this irresistible Reuben dip. It’s super creamy and full of savory flavors.

Reuben Dip Ingredients

To make Reuben dip you will need cream cheese, corned beef, Swiss cheese, sour cream, sauerkraut, Thousand Island dressing and parsley. Serve this dip with some of my favorite appetizer recipes like baked chicken wings, spinach artichoke dip and cowboy caviar. This dip is also fantastic for St. Patrick’s day with some other party favorites like an Irish mule, a shamrock shake and Irish soda bread.

How Do You Make Reuben Dip?

When you make this Reuben dip recipe start by placing softened cream cheese, cooked and diced corned beef, shredded Swiss cheese, sour cream, sauerkraut, and Thousand Island dressing in a large bowl. Mix everything together. Spread the mixture into a prepared baking dish or skillet. Sprinkle a layer of Swiss cheese over the top. Bake the dip until browned and bubbly. Add a sprinkling of parsley and enjoy!

Tips For The Perfect Dip

Make sure your cream cheese is at room temperature before you mix up your dip. If the cream cheese is too cold, the corned beef will break up into tiny pieces as you mix everything together. I think this Reuben dip tastes best with larger pieces of corned beef! I like to use freshly grated cheese for this dip. It’s a little more work, but the bagged pre-shredded cheeses are often coated with stabilizing agents and they don’t melt nearly as well. I typically use bottled Thousand Island dressing, but you can make your own if you prefer.

Flavor Variations

While this hot dip is creamy and delicious as-is, you can modify the recipe to suit you own taste.

Mayo: You can use mayonnaise instead of sour cream if you prefer. Meat: You can make this dip with cooked and diced chicken, ham, beef brisket, pastrami, sausage or even bacon. Spicy: You can bring the heat by adding some hot sauce to the dip. Cheese: You can try mild cheeses that melt well like Monterey Jack cheese or cheddar cheese or make a blend of cheeses.
