We’re so close to summer! I know everyone’s excitement is building, with Memorial Day just one week from today. We’re making summer plans, searching for new recipes, and getting excited for what’s to come! I knew these skewers would be wonderful for this week. Now that the weather is turning to summery temperatures, they’re great for throwing on the grill. If you’re planning any kind of Memorial Day party, I highly recommend making these! Lately, I’ve been having a lot of fun creating new beef recipes. I’ve shared so many chicken recipes over the last 12 years, but not nearly the same amount of beef. But I’m coming up with so many fun summer beef ideas. We love Asian-style dinners, so these skewers are perfect for us. I’ve already made them three times this month! I love to serve the skewers bowl-style with coconut rice and a simple mix of avocado, lime, cilantro, basil, toasted sesame seeds, and a pinch of flaky sea salt. So delicious!

Here are the Details

Step 1: make the peanut sauce This sauce is my favorite. When I first started making it, I used to make it with coconut milk, but now I make it even simpler. It’s a mix of peanut butter (I love Whole Foods 365 creamy peanut butter with just peanuts and salt), tamari (you can, of course, use soy sauce), Thai red curry paste, pickled ginger (often labeled as sushi ginger), and toasted sesame oil. I find it easiest to blend the sauce in a blender or use an immersion blender to get it really creamy! Step 2: the steak I kept this so simple. Use a skirt or flank steak and cut the meat into cubes. Then mix the steak with sweet Thai chili sauce, tamari (or soy), lots of garlic and ginger, and some chili paste (either Thai or Korean Gochujang). If you have time, let the steak marinate for an hour or even all day long to deepen the flavors. Step 3: thread the steak onto skewers and grill Thread the marinated steak onto the skewers. If you want, you could also add chunks of pineapple to each skewer—that would be so delicious! Heat your grill and cook each skewer until light grill marks appear around the steak. Step 4: serving While the steak is cooking, I like to mix slices of avocado with lime juice, cilantro, basil, and sesame seeds. I also make a pot of coconut rice! Then, I love to serve the skewers over the rice. Top with lots of peanut sauce, and enjoy the avocado on the side. Be generous with the peanut sauce, you’ll love it! I swear it’s addicting. Enjoy immediately. These skewers are so little effort, and so delicious and fun! Everyone in my family has agreed that they could easily eat this once or twice a week. The steak is perfection—spicy, sweet, and tangy—and the sauce is everyone’s favorite—creamy, peanutty, and salty! Looking for other recipes?
