When the weather warms up, I use this skirt steak marinade to grill up a fantastic meal that the whole family loves. I serve my steak with grilled zucchini and oven roasted potatoes, then watch the rave reviews come in! In my opinion, skirt steak is an under utilized cut of meat and is one of my favorite grilling recipes. I love that it cooks quickly, tends to be less expensive and is packed with flavor. I coat my meat in skirt steak marinade, then thinly slice it for a hearty main course option.
Skirt Steak Marinade Ingredients
This recipe contains soy sauce, lemon juice, olive oil, Worcestershire sauce, garlic, Italian seasoning, Dijon mustard, salt, pepper and onion powder.
How Do You Make Skirt Steak Marinade?
Place all of the marinade ingredients in a bowl or resealable bag. Stir the ingredients together to thoroughly combine. Put the steak in the bowl or bag. Cover the bowl, or seal up the bag. Refrigerate for 6-8 hours, then cook the meat as desired.
Tips For The Perfect Dish
I recommend a minimum of two hours of marinating time, but 6-8 hours is really ideal. This recipe makes enough to marinate two pounds of steak. It can easily be doubled or tripled if you have more meat. It’s very important to let your steak rest for a few minutes in the pan after it’s cooked. Be sure to slice it against the grain (muscle fibers) for the most tender end result. No lemon juice on hand? Try using 2 tablespoons of red wine vinegar instead. Use a meat thermometer to make sure your steak does not overcook. Leftovers of the cooked steak will stay fresh in an airtight container in the refrigerator for up to 3 days. I often use the leftovers for salad or skirt steak tacos. In my opinion, steak and potatoes are the ultimate pairing. Add a great potato side dish such as Hasselback potatoes, German potato salad or classic oven baked potatoes.
Flavor Variations
While this recipe is fabulous as-is, you can add other ingredients to the marinade to customize the flavors to your tastes.
Asian Style: Omit the Dijon mustard and Italian seasoning, and use lime juice instead of lemon juice. Add 2 teaspoons minced ginger, 2 tablespoons sliced green onions and 1 teaspoon of sesame oil. Spicy: Turn up the heat by adding some sriracha sauce or red pepper flakes to the marinade. Herb Lover’s: Feel free to use fresh herbs instead of dried Italian seasoning. Some of my favorite options include a mix of parsley, rosemary, basil, thyme, chives and even dill. Mexican: Use my steak fajita marinade for a Mexican inspired meal!
