Happy Saturday! Such a fun cocktail to share with you all today, Bellinis 3 ways with my favorite summer fruits. It’s been a few weeks since my last cocktail Saturday post so I’m excited for today’s Bellinis. First off, I’ve never shared any kind of Bellini with you guys before, so these feel especially fun. I was inspired to make the simple summer Bellinis by an overflowing fridge full of summer berries and sweet overly ripe peaches. Typically when mixing up new cocktails I don’t usually reach for a bottle of bubbly champagne. But when I’m feeling the need to use something outside the realm of tequila and vodka, I reach for something fun. Enter these drinks. Not only are these Bellinis the perfect August cocktail to mix up, but they’re incredibly easy too! You only need fresh fruits, Florida’s Natural® Brand Orange Juice, and your favorite bottle of chilled champagne.

Here are all the details…

Let’s break these down…drink by drink. We have three very different Bellinis to chat about! We have blackberry thyme, raspberry peach, and strawberry lavender…three of my favorite flavor combinations. Making each Bellini is easy. You simply blend the fruit with a touch of orange juice into a smooth puree. Then add the puree to a fun wine or champagne glass and top each glass off with champagne, gently stirring to combine. For the peach Bellini, I love leaving the skins on my peaches, they add flavor and such pretty color. But of course, if you prefer, you can remove the skins. And for the strawberry lavender, you need to simmer the berries and lavender together before blending. Then be sure to strain the lavender out. It’s key to infuse the berry puree with herbal, summery lavender.

The one extra special touch?

A splash of orange juice…which isn’t traditional in a Bellini but I find it to be just the right amount of sweet citrus kick. It really helps the Bellinis shine, and well, to make them extra special! I always have orange juice in my fridge and often use it to create quick sauces, dressings, and easy to mix up cocktails – like these Bellinis. OJ adds a delicious citrus kick that’s fresh and flavorful. What I love most about Florida’s Natural® Brand Orange Juice is that it’s made with only Florida oranges…that’s it. There are zero added sugars or artificial ingredients. Only oranges…just like it should be!

Swaps and substitutes…

If you don’t have blackberries, but you do have blueberries, raspberries, or strawberries, either of these berries will be great. They’re all going to taste delicious. So use what you have or what you’ll love most. No fresh berries or peaches on hand? Use frozen. And one more tip…top each Bellini with additional frozen berries and or peaches. They’ll help to chill your cocktail!. Sooo, have I convinced you that Bellinis should now be a part of your weekend plans? Yeah!
