Make this tomato avocado salad recipe by first preparing your veggies. Slice your red onion, mince your jalapeno pepper and chop up your cilantro leaves. Next cut up your tomatoes and avocados. Place the veggies in a large bowl. To make the dressing, whisk together olive oil, lime juice, honey, cumin, chili powder, salt and pepper in a small bowl. Pour the dressing over the tomato and avocado mixture and toss everything together.

I recommend serving this salad immediately. If you need to prepare it in advance, you can cover the salad and store it in the refrigerator for one hour. You can use any type of tomato you like in this dish. I used small vine ripened tomatoes which I cut into quarters, but you could also use halved cherry tomatoes, halved grape tomatoes or chopped Roma tomatoes. Try to cut thin slices of red onion. I use a mandoline to get paper thin slices. You can adjust the heat in this salad by adding or subtracting jalapeno. The amount in the recipe just gives the salad a little kick.
