Happy almost Christmas Eve! I’m not ready for this holiday season to be over. This time of year is full of magic, fun, and beauty. I try to fill it with happiness and yummy food. I love creating these cocktails for you all, I have so much fun with them! I’m so sad this is our last Christmas recipe for the year, but I saved my very favorite for today! I’ve been planning this simple cocktail for weeks, even down to these pretty glasses. I can’t wait to share!! When I was going through drink recipes to share this season, one of my recipes was titled Uncle Eddy. It was more that I loved the idea of creating a drink that Uncle Eddy (from Christmas Vacation, of course) would drink up on Christmas Eve. If you’ve seen the movie, which I assume most of us have, then you know that Eddy drinks eggnog. I’m not very keen on drinking eggnog, so I mixed together a drink that’s even better. A white Russian with bourbon, cinnamon, and nutmeg to give the drink a subtle eggnog flavor, just minus all the raw eggs. It’s my favorite drink. It’s kind of dessert-like and the perfect drink to end a Christmas night celebration with.

Step 1: the cinnamon syrup A mix of honey, cinnamon sticks, and nutmeg. Simmer the honey with the cinnamon to infuse the honey with rich cinnamon flavor, then add nutmeg. The nutmeg is key here, it’s used in eggnog and provides a nice “nog” flavor. You can make this syrup ahead of time, and then it’s ready to go for easy cocktail mixing. Step 2: mix and stir Now it’s time to mix. Pour the vodka and bourbon (or rum) over ice. Add the cinnamon syrup and then the Kahlúa. Give this a stir, then pour the cream overtop. I love to finish with a cinnamon stick, freshly grated nutmeg, and then a single-star anise. It’s so festive! You really can’t go wrong with a combo like this. It’s a bit over the top, but it’s totally ok – it’s the holidays. Uncle Eddy would fully approve of this, it’s his kind of cocktail, for sure.
